The Paradiso.Pure Living has for you this basic vegan recipe for cookies: 

250 gr semolina 
85 gr rice flakes
100 gr brown sugar 
20 gr grated lemon peel
3 gr yeast
100 gr rising milk
80 g olive oil
salt

 

You can spice up this recipe as you like or decorate the cookies according to the occasion – for example, Christmas.

Vegan Flower Cookies

Ingredients
  

  • 300 gramm flour (organic wheat or spelt flour)
  • 50 gramm almonds (grounded)
  • 80 gramm Birch sugar
  • 2 tbsp cocoa
  • 175 gramm vegan butter
  • 3 tbsp soy or oat milk
  • Vanilla, lemon zest
  • Jam and flower sugar

Instructions
 

  • Mix flour with almonds, milk, sugar, cocoa, vanilla and lemon zest.
  • Knead in vegan butter until you have a smooth shortcrust pastry. Cover the dough with cling film and let it rest in the refrigerator for about an hour.
  • After resting, roll out the dough on a work surface dusted with flour, so about ½ cm thick and cut out cookies with a flower shape.
  • Bake the cookies in the preheated oven at 175 degrees hot air for about 10 minutes. 
  • Let the cookies cool and always put 2 cookies together with jam.
    Then sprinkle with floral sugar and decorate with flowers as you like.
